Salted White Chocolate Oatmeal Cookies

  • 1 C flour
  • ¾ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp regular table salt
  • 1¾ sticks unsalted butter, slightly softened
  • 1 C sugar
  • ¼ C packed light brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2½ C old-fashioned rolled oats
  • 6 ounces good-quality white chocolate bar, chopped (not “white chocolate” chips)
  • ½ teaspoon flaky sea salt (like Maldon or fleur de sel) (for sprinkling on top) I used regular sea salt
  1. Preheat oven to 350 degrees
  2. Cover cookie sheet with parchment paper or Silpat
  3. Sift together flour, baking powder, baking soda, and table salt
  4. Cream butter and sugars until light and fluffy
  5. Add egg and vanilla and beat until well mixed
  6. Add flour mixture a little at a time and mix until just incorporated
  7. Next add oats and white chocolate and mix until well blended
  8. Using a cookie scoop, make dough into balls (about 2 tablespoons) Roll balls, then place on lined baking sheets about 2½ inches apart
  9. Gently press down each ball to about ¾-inch thickness
  10. Sprinkle a flake or two of sea salt on each cookie or if using regular sea salt sprinkle with salt
  11. Bake until cookies are golden brown, about 13 to 16 minutes
  12. To help cookies brown evenly you can rotate your cookie sheet halfway through the baking process
  13. Cool cookies and enjoy
