Healthy fettuccine alfredo with shrimp & mushrooms

Ingredients

  • 1 big cauliflower floret
  • 1 tablespoon butter
  • 2 shallots, minced, or 2 tablespoons of minced onion
  • 2 garlic cloves, minced
  • 1/4 cup (up to 1/2 cup) heavy cream
  • 1/2 cup finely grated Parmesan cheese (Parmigiano-Reggiano) or more
  • 1/2 teaspoon salt (or more, to taste)
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon nutmeg
  • 2 cups fresh shelled peas (or use frozen)
  • 1 tablespoon butter
  • 8 oz sliced mushrooms
  • 1 pound dried fettuccine pasta
  • fresh parsley, for garnish, optional

Ingredients for shrimp:

  • 3 tablespoons olive oil
  • 22 (count) peeled and deveined shrimp
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon oregano
  • 1/4 teaspoon cumin
  • 1/4 teaspoon chili powder
