Crock Pot Roasted Red Pepper Chicken and Pesto Sandwich

Recipe type: Slow Cooker
  • 1½ lb. chicken breasts
  • ½ C roasted red peppers, sliced thinly
  • salt and pepper
Pesto Mayo
  • ¼ C mayo
  • 3 Tbsp pesto
  • focaccia bread
  • tomato
  • lettuce
  1. Place chicken and roasted red peppers in crock pot.
  2. Season with salt and pepper.
  3. Cook on high for 4 hours or low for 6-7 hours.
  4. Remove chicken from crock pot and shred. Return to crock pot and mix well.
Pesto Mayo
  1. In a bowl combine mayo and pesto
  2. Spread on focaccia bread, add tomato and lettuce
