Chocolate Gingerbread Cookies

Ingredients
  • 2 cups of unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp salt
  • ½ tsp ginger
  • ¼ tsp cloves
  • 1 cup of butter, softened
  • 1 cup of brown sugar
  • ½ cup molasses
  • 2 eggs
  • 1 tsp vanilla
  • ½ cup chocolate chunks
  • granulated sugar for rolling
Instructions
  1. sift together the cocoa powder, baking powder, and spices
  2. cream butter with the brown sugar until light
  3. add molasses, and eggs, stopping to scrape the sides of the bowl, and vanilla
  4. mix in the cocoa powder, and fold in chocolate chunks
  5. chill dough at least 1 hour
  6. heat oven to 350 degrees
  7. line baking sheets with parchment or silpat baking mats
  8. scoop 1 tbsp of dough (a cookie scoop works well as this dough is sticky) roll until smooth, and then roll in sugar
  9. place cookies on prepared sheets at least 2 inches apart
  10. bake 10 minutes
  11. allow to cool 5 minutes on sheets, and then carefully move to racks
